These started from rotten spuds

One of my favorite kinds of recycling involves sticking rotting potatoes in a bin and filling it with dirt as they grow. With luck and timing, it leads to fresh potatoes with such tender skins, they melt in the mouth. (Photo by Rachel Williams)
